Tender roast beef, melty provolone, and caramelized onions come together on sweet rolls, baked until golden and served with warm au jus for dipping. Ingredients
3 tbsp (42 g) unsalted butter
1 medium onion, thinly sliced (about 150 g)
2 tsp (2.5 g) fresh thyme, minced
¼ tsp (1.5 g) kosher salt
¼ tsp (1.5 g) black pepper
12 sweet rolls (about 450 g total)
10 slices (200 g) provolone cheese
14 oz (400 g) sliced deli roast beef
½ cup (115 g) unsalted butter, melted
1 ½ tbsp (10 g) dried onion soup mix
1 packet (28 g) au jus gravy mix
3 cups (710 ml) water
Fresh chopped parsley for garnish (optional)
Instructions
Caramelize onions: Melt 3 tbsp butter in a skillet over medium heat. Add onions and cook for 12–15 minutes, stirring occasionally, until golden. Mix in thyme, salt, and pepper. Set aside.
Assemble sliders: Preheat oven to 350°F (175°C). Slice rolls horizontally (keeping connected). Layer bottom halves in a baking dish, then add half the cheese, roast beef, caramelized onions, and remaining cheese. Top with the roll lids.
Add buttery topping: Combine melted butter and onion soup mix. Brush generously over the tops of the rolls. Cover with foil.
Bake: Bake covered for 25 minutes, then uncover and bake 5 more minutes until golden brown.
Prepare au jus: In a saucepan, whisk au jus mix with 3 cups water over medium heat until smooth and hot.
Serve: Garnish sliders with parsley and serve warm with the au jus for dipping.
Notes
Use Hawaiian rolls for a soft, slightly sweet touch.
Swap provolone with Swiss or mozzarella if preferred.
Assemble ahead and refrigerate; bake before serving.
For extra crispness, brush with butter again midway through baking.
Serve with individual ramekins of au jus for a fun party presentation.
