Ingredients
-
42 g (3 tbsp) unsalted butter
-
1 medium onion, thinly sliced
-
2 g (2 tsp) fresh thyme, minced
-
1.5 g (¼ tsp) kosher salt
-
0.5 g (¼ tsp) black pepper
-
12 sweet rolls
-
10 slices provolone cheese
-
400 g (14 oz) sliced deli roast beef
-
115 g (½ cup) unsalted butter, melted
-
12 g (1½ tbsp) dried onion soup mix
-
1 packet au jus gravy mix
-
720 ml (3 cups) water
-
Fresh parsley, chopped (optional garnish)
Instructions
1. Caramelize the Onions
Melt 3 tbsp butter in a skillet over medium heat. Add onions and cook 12–15 minutes, stirring occasionally, until golden. Stir in thyme, salt, and pepper. Set aside.
2. Build the Sliders
Preheat oven to 350°F (175°C). Slice sweet rolls horizontally, keeping them attached. Place bottom halves in a greased 11×7-inch baking dish. Layer with half the provolone, roast beef, caramelized onions, and remaining provolone. Top with the roll tops.
3. Brush with Butter
Mix melted butter with dried onion soup mix. Brush tops of rolls generously.
4. Bake
Cover loosely with foil and bake 25 minutes. Uncover and bake 5 minutes more until golden and melty.
5. Make the Au Jus
Prepare au jus by whisking gravy mix into 3 cups of water. Heat until warm.
6. Serve
Slice sliders, garnish with parsley, and serve with au jus for dipping.
Notes
Assemble ahead and bake just before serving for convenience.
Drain roast beef slightly if it’s very juicy to prevent soggy bread.
Swap provolone with Swiss or mozzarella if preferred.
Double the recipe on a sheet pan to feed a larger crowd.
