Description

This Hamburger Rice Casserole is a weeknight favorite that combines hearty beef, soft rice, and melted cheese. It’s quick, comforting, and super customizable, making it a crowd-pleaser for any family meal.

Ingredients

Scale
  • 1 lb ground beef
  • 1 cup long-grain white rice (cooked)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup chopped bell peppers (optional)
  • 1 small onion, diced
  • 1 cup frozen peas (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)
  • 1 cup beef broth (or water)

Instructions

  • Cook the Beef: Heat olive oil in a large pan over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  • Sauté Vegetables: Add diced onions and bell peppers to the pan and sauté for 3-4 minutes until softened.
  • Prepare the Rice: While the beef cooks, prepare the rice according to package instructions, or use leftover rice.
  • Mix Together: In a large bowl, combine the cooked beef, rice, peas, and seasonings (garlic powder, onion powder, salt, and pepper). Stir in half of the shredded cheddar cheese.
  • Assemble the Casserole: Transfer the mixture into a greased 9×13 baking dish. Pour the beef broth over the mixture, and top with the remaining cheddar cheese.
  • Bake: Preheat your oven to 350°F (175°C). Bake the casserole for 20-25 minutes or until the cheese is melted and bubbly.
  • Serve: Let the casserole cool slightly before serving. Enjoy this easy, cheesy, comforting meal!

Notes

  • Customizable Ingredients: You can easily swap ingredients to suit your taste or dietary preferences, like using ground turkey for a leaner option or adding extra veggies such as zucchini or mushrooms for more nutrition.
  • Prep Ahead: This casserole can be made ahead of time and refrigerated or frozen. It reheats well, making it perfect for meal prepping or busy nights.
  • Cheese Choices: Cheddar is a classic choice, but feel free to experiment with mozzarella, Monterey Jack, or even a cheese blend to enhance the flavor and creaminess.
