Description
Simple Easy Peach Sorbet made with ripe peaches, caster sugar, and lemon juice. This refreshing dairy-free frozen dessert needs no ice cream maker and tastes like summer in every scoop.
Ingredients
Scale
- 800 g peeled and sliced ripe yellow peaches, fresh or frozen
- 200 g caster sugar
- 1 tablespoon lemon juice, added to taste
Instructions
- Slice the peaches into 8 wedges, then peel each slice.
- Place the peach slices in the bowl of a food processor with the caster sugar.
- Process until smooth, stopping to scrape down the sides as needed.
- Add lemon juice a little at a time, blending briefly and tasting after each addition.
- Transfer the smooth peach mixture to a freezer-safe container.
- Cover tightly and freeze for 6 to 7 hours, or until firm.
- Let the sorbet sit at room temperature for 5 to 10 minutes before scooping and serving.
Notes
- Add lemon juice to taste instead of adding it all at once because peach sweetness can vary.
- Use a 4:1 fruit-to-sugar ratio by weight for the best consistency.
- For 800 g peeled and sliced peaches, use 200 g caster sugar.
- To scale the recipe, weigh the prepared peaches and divide that weight by 4 to calculate the sugar amount.
