- 1 cup butter, room temperature
- 2/3 cup granulated sugar
- 3 tablespoons granulated sugar for rolling
- 2 cups + 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract (optional but recommended)
- Rainbow sprinkles or nonpareils (optional but recommended)
Instructions
- Preheat oven to 325°F and line 2 large baking sheets with parchment paper
- Beat together butter and 2/3 cup sugar in a medium bowl using a handheld electric mixer
- Add flour and blend until a soft dough forms
- Mix in vanilla extract if using
- Pinch a small piece of dough to test; knead slightly if crumbly until smooth
- Scoop 1-inch balls of dough using a cookie scoop
- Roll each ball between your palms until smooth
- Roll dough balls in remaining sugar until lightly coated
- Place cookies 2 inches apart on prepared baking sheets
- Press down gently with the bottom of a measuring cup or glass to flatten
- Add sprinkles if desired and lightly press them into the dough
- Bake for 14–16 minutes until edges are lightly golden
- Remove from oven and rest cookies on baking sheets for 10–15 minutes before cooling completely
Notes
- This recipe produces slightly crunchy sugar cookies
- If dough feels crumbly knead it gently until smooth and buttery
- Measure flour by spooning and leveling to avoid dry cookies
- Let cookies rest on the baking sheet after baking so they firm up properly
