2 large eggs

Instructions
In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, sugar, nutmeg, and cinnamon.
In another bowl, whisk together the eggnog, eggs, melted butter, and vanilla extract.
Pour the wet mixture into the dry ingredients. Stir gently until just combined. Don’t overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
Scoop about ¼ cup of batter onto the skillet for each pancake.
Cook for 2-3 minutes until bubbles appear on the surface, then flip and cook for another 1-2 minutes until golden brown.

For a dairy-free version, use plant-based eggnog and dairy-free butter.
