Description

Egyptian Lentils and Rice is an easy slow cooker recipe made with lentils, rice, onion, and warm spices for a filling vegan and gluten free dinner.


Ingredients

Scale
  • 1 cup green lentils
  • 3/4 teaspoon salt
  • 4 1/2 teaspoons olive oil
  • 1 large onion, chopped
  • 3/4 teaspoon cinnamon
  • 1 1/4 tablespoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/2 cup jasmine rice
  • 6 cups vegetable stock

Instructions

  1. Add olive oil to the bottom of the slow cooker.
  2. Add lentils, onion, rice, salt, cinnamon, cumin, pepper, and stock.
  3. Stir gently to combine.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  5. Stir occasionally and adjust liquid if needed.
  6. Serve warm with optional toppings.
