Description
Egyptian Lentils and Rice is an easy slow cooker recipe made with lentils, rice, onion, and warm spices for a filling vegan and gluten free dinner.
Ingredients

- 1 cup green lentils
- 3/4 teaspoon salt
- 4 1/2 teaspoons olive oil
- 1 large onion, chopped
- 3/4 teaspoon cinnamon
- 1 1/4 tablespoon ground cumin
- 1/4 teaspoon black pepper
- 1/2 cup jasmine rice
- 6 cups vegetable stock
Instructions
- Add olive oil to the bottom of the slow cooker.
- Add lentils, onion, rice, salt, cinnamon, cumin, pepper, and stock.
- Stir gently to combine.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
- Stir occasionally and adjust liquid if needed.
- Serve warm with optional toppings.

- Store leftovers in the refrigerator for up to 3 days.
