  • ¼ cup (30g) powdered sugar

  • 1 egg, beaten (for sealing)

Instructions

Prepare the Blueberry Filling: In a saucepan over medium heat, cook blueberries, sugar, and lemon juice until berries soften (5–7 minutes). Stir in cornstarch mixture to thicken. Let cool completely.
Make the Cream Cheese Mixture: In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble the Egg Rolls: Lay out an egg roll wrapper. Spread a small amount of cream cheese mixture, then add blueberry filling. Roll tightly, folding in the sides. Seal the edge with beaten egg.
Choose Cooking Method:

  • Deep-Fry: Heat oil to 350°F (175°C) and fry rolls for 2–3 minutes per side until golden brown. Drain on paper towels.
  • Air-Fry: Preheat to 375°F (190°C), spray rolls with oil, and cook for 8–10 minutes, flipping halfway.
