Instructions
Prepare the Blueberry Filling: In a saucepan over medium heat, cook blueberries, sugar, and lemon juice until berries soften (5–7 minutes). Stir in cornstarch mixture to thicken. Let cool completely.
Make the Cream Cheese Mixture: In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble the Egg Rolls: Lay out an egg roll wrapper. Spread a small amount of cream cheese mixture, then add blueberry filling. Roll tightly, folding in the sides. Seal the edge with beaten egg.
Choose Cooking Method:
