Instructions

1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In a larger bowl, cream together the butter, granulated sugar, and brown sugar until smooth and creamy.

4. Beat in the eggs, one at a time, followed by the vanilla extract and ground espresso beans.

5. Gradually mix in the dry ingredients until just combined.

6. Fold in the chocolate chips.

7. Using a cookie scoop or a spoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

8. Bake in the preheated oven for 10-12 minutes or until the edges are set but the center is still soft.

9. Remove from the oven and let the cookies cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

Notes
