Description

Chicken fajita casserole with tender chicken, seasoned rice, peppers, tomatoes, and melted cheese.


Ingredients

4 cups shredded cooked chicken

2 cups instant rice

1 (10.5-ounce) can cream of chicken soup

1 cup sour cream

1 cup frozen diced onion and bell pepper blend

1 (10-ounce) can diced tomatoes with chilies

1 1/2 cups chicken broth

1 packet fajita seasoning

2 cups shredded Mexican blend cheese


Instructions

1. Preheat the oven to 350°F and spray a 9×13 dish.

2. Stir together all ingredients except half the cheese.

3. Spread into dish, cover with foil, and bake 35–45 minutes until rice is tender.

4. Top with remaining cheese and bake until melted.

Notes

Rice texture varies by brand. Add a splash of broth if needed.
