Description

Family Black Bean Corn Salsa is a fresh and healthy appetizer made with black beans, corn, peppers, and citrus, perfect as a dip or topping.


Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup black beans, drained and rinsed
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh jalapeño, finely diced (optional)
  • 1/4 cup red bell pepper, finely diced
  • 2 teaspoons lime juice
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt

Instructions

  1. Thaw the corn and drain excess moisture
  2. Rinse and drain the black beans
  3. Finely chop cilantro, red onion, red bell pepper, and jalapeño
  4. Add all ingredients to a large mixing bowl
  5. Mix everything together until well combined
  6. Cover and chill in the refrigerator for at least 30 minutes
  7. Stir before serving

  2. Adjust jalapeño to control heat level
  3. Add diced avocado for variation
