For the Chicken

  • 4 boneless, skinless chicken thighs

  • 1 tsp paprika

  • ½ tsp chili powder

  • ¼ tsp cayenne pepper (adjust to taste)

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • 2 Tbsp (30 ml) cooking oil

For the Ramen & Sauce

  • 2 packs ramen noodles (discard seasoning packets)

  • 4 garlic cloves, minced

  • 1 cup (240 ml) chicken broth

  • ½ cup (120 ml) heavy cream

  • 2 Tbsp (30 ml) soy sauce

  • 2 green onions, chopped (for garnish)


Instructions

  • Season the chicken: Rub chicken thighs with paprika, chili powder, cayenne, garlic powder, and black pepper. Rest 15 minutes.

  • Cook the chicken: Heat oil in a skillet over medium-high. Sear chicken 4–5 minutes per side until golden and cooked through. Remove, rest, then slice.

  • Make the sauce: Reduce heat to medium. In the same skillet, sauté garlic for 30 seconds. Stir in broth and soy sauce, scraping up brown bits. Add cream and simmer 5 minutes until slightly thickened.

  • Cook noodles: Boil ramen noodles according to package directions. Drain.

  • Assemble: Divide noodles into bowls. Spoon creamy garlic sauce over noodles, then top with sliced chicken.

  • Serve: Garnish with green onions and serve hot.

Notes

Searing the chicken builds flavor for the sauce.

Adjust cayenne for spice level or add chili oil for extra heat.

Swap half-and-half or coconut milk for a lighter sauce.

Try fresh ramen or udon for an upgraded texture.
