Description

Creamy Fiesta Chicken Crock Pot combines tender shredded chicken, black beans, corn, Rotel, ranch seasoning, fresh lime, and cream cheese. Serve it in tacos, rice bowls, wraps, quesadillas, or over nachos for an easy family dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet dry ranch dressing seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 block (8 ounces) plain cream cheese
  • Juice of 2 fresh limes
  • 1/2 cup chicken broth

Instructions

  1. Place the thawed chicken breasts in the bottom of a 6-quart slow cooker.
  2. Add the drained and rinsed black beans, drained corn, and undrained Rotel tomatoes and green chilies.
  3. Sprinkle the ranch seasoning, onion powder, and black pepper evenly over the ingredients.
  4. Squeeze the juice from both limes over the mixture.
  5. Pour in the chicken broth and place the whole block of cream cheese on top.
  6. Cover and cook on HIGH for 3 to 4 hours or on LOW for 5 to 6 hours.
  7. Check the thickest chicken breast with an instant-read thermometer. The chicken should reach 165°F.
  8. Remove the cooked chicken from the slow cooker and shred it with two forks.
  9. Return the shredded chicken to the slow cooker.
  10. Stir until the melted cream cheese evenly coats the chicken, beans, corn, and tomatoes.
  11. Let the mixture rest for 5 minutes, stir again, and serve hot.

Notes

  1. Use thawed chicken breasts for safe, even cooking.
  2. Keep the Rotel undrained, but drain the corn and drain and rinse the black beans.
  3. For a thinner sauce, add chicken broth one tablespoon at a time after shredding.
  4. For a thicker sauce, cook uncovered on HIGH for 10 minutes, stirring twice.
  5. Serve in tacos, rice bowls, quesadillas, wraps, or over tortilla chips.
  6. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  7. Freeze cooled individual portions for up to 3 months.
