- 1 cup cherry tomatoes quartered
- Fresh corn from 1 ear
- 1/3 cup finely chopped red onion
- 1/2 red bell pepper chopped
- 1 jalapeno pepper diced
- 2 tablespoons finely chopped cilantro
- 1 garlic clove minced
- 2 tablespoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Whisk olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and black pepper together in a bowl.
- Rub the mixture evenly over chicken breasts.
- Let the chicken rest for 30 minutes at room temperature or refrigerate up to 8 hours.
- Combine tomatoes, corn, red onion, bell pepper, jalapeno, cilantro, garlic, lime juice, cumin, salt, and pepper in a bowl.
- Cover and chill the salsa mixture for about 30 minutes.
- Heat a greased skillet or grill pan over medium high heat.
- Cook chicken undisturbed for 3 to 5 minutes until browned.
- Turn chicken over, cover, and cook for 5 to 7 minutes until the internal temperature reaches 165°F.
- Remove chicken and let it rest for 5 minutes before slicing.
- Gently fold chopped avocados into the salsa just before serving.
- Serve sliced chicken topped with avocado salsa.
