Description

Golden, soft, and airy, these fluffy pancakes are the perfect way to start your morning! Light yet satisfying, they pair wonderfully with maple syrup, fresh fruit, or a dusting of powdered sugar. Get ready to make the best pancakes ever!

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 teaspoon vinegar)
  • 1 egg
  • 2 tablespoons melted butter
  • ½ teaspoon vanilla extract (optional)

Instructions

Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Mix Wet Ingredients – In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract.
Combine – Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
Rest the Batter – Let it sit for 5-10 minutes to help air bubbles form for extra fluffiness.
Preheat Pan – Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
Cook the Pancakes – Pour about ¼ cup of batter onto the pan for each pancake.
Flip at the Right Time – When bubbles appear on the surface and the edges look set, flip and cook for 1-2 more minutes until golden brown.
Serve & Enjoy – Stack them high and serve warm with your favorite toppings!

Notes

Important Notes About This Recipe

Do Not Overmix the Batter – Stir the ingredients until just combined. Overmixing activates the gluten, making the pancakes dense instead of fluffy. A few small lumps are perfectly fine!

Let the Batter Rest – Allowing the batter to sit for 5-10 minutes helps the baking powder and baking soda create air bubbles, leading to a lighter, fluffier texture.

Use Medium Heat for Cooking – Too high heat will burn the outside before the inside is fully cooked, while too low heat can make pancakes flat and chewy. Medium heat ensures even cooking and a golden-brown finish.
