Description

French Crullers made from classic choux pastry with a light, airy interior and a smooth vanilla glaze, ideal for breakfast or coffee.


Ingredients

  • 1 1/4 cups water
  • 1/2 cup butter, room temperature
  • 4 1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 4 large eggs
  • 2 egg whites
  • 2 cups powdered sugar
  • 1 tablespoon corn syrup
  • 23 teaspoons hot water
  • 2 teaspoons vanilla extract

Instructions

  1. Combine water, butter, sugar, salt, and vanilla in a saucepan and bring to a boil.
  2. Add flour and stir until a thick dough forms and coats the bottom of the pan.
  3. Transfer dough to a stand mixer and mix until slightly cooled.
  4. Add eggs one at a time, then egg whites, mixing until smooth and glossy.
  5. Heat oil to 375°F and pipe dough rings onto parchment squares.
  6. Fry for 2–3 minutes per side until golden.
  7. Drain on a wire rack.
  8. Whisk glaze ingredients until smooth.
  9. Dip warm crullers into glaze and let excess drip off.
