French Crullers made from classic choux pastry with a light, airy interior and a smooth vanilla glaze, ideal for breakfast or coffee.
Ingredients

- 1 1/4 cups water
- 1/2 cup butter, room temperature
- 4 1/2 teaspoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 4 large eggs
- 2 egg whites
- 2 cups powdered sugar
- 1 tablespoon corn syrup
- 2–3 teaspoons hot water
- 2 teaspoons vanilla extract
Instructions
- Combine water, butter, sugar, salt, and vanilla in a saucepan and bring to a boil.
- Add flour and stir until a thick dough forms and coats the bottom of the pan.
- Transfer dough to a stand mixer and mix until slightly cooled.
- Add eggs one at a time, then egg whites, mixing until smooth and glossy.
- Heat oil to 375°F and pipe dough rings onto parchment squares.
- Fry for 2–3 minutes per side until golden.
- Drain on a wire rack.
- Whisk glaze ingredients until smooth.
- Dip warm crullers into glaze and let excess drip off.
