Description
French Onion Pasta is a creamy one pot comfort dish inspired by French onion soup with caramelized onions, Gruyere, and rich umami flavor.
Ingredients

- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 large yellow onions, sliced
- 4 garlic cloves, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon reduced sodium soy sauce
- 5 1/2 cups water
- 1 (12 oz) can evaporated milk
- 2 tablespoons beef bouillon
- 1 pound short-cut pasta
- 5 oz Gruyere cheese, shredded
- 1/4 cup Parmesan cheese, shredded
Instructions
- Caramelize onions in butter and olive oil for 30-35 minutes.
- Add garlic, soy sauce, Worcestershire and cook briefly.
- Add liquids, seasonings and bring to boil.
- Add pasta and simmer until al dente.
- Remove from heat and stir in cheeses until melted.
Notes
- Use freshly grated cheese for best melt.
- Add water if pasta absorbs liquid too quickly.
- Store leftovers refrigerated up to 5 days.
