Description

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 1 cup shredded gruyère cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tsp fresh thyme, chopped
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1/4 cup beef broth
  • 8 toothpicks or kitchen twine

Instructions

  • Prepare the onions: Heat butter and olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 20-30 minutes until caramelized and golden. Add beef broth and thyme, stirring to deglaze the pan. Remove from heat and set aside.
  • Prepare the chicken: Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut through. Season the chicken inside and out with garlic powder, salt, and pepper.
  • Stuff the chicken: In a bowl, mix the caramelized onions with gruyère and mozzarella cheeses. Stuff each chicken breast with the onion and cheese mixture, securing the edges with toothpicks or kitchen twine.
  • Sear the chicken: Preheat a skillet with a drizzle of olive oil over medium-high heat. Sear the stuffed chicken breasts on each side for 3-4 minutes until golden brown.
  • Bake: Transfer the chicken to a baking dish and bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  • Serve: Remove toothpicks or twine, garnish with fresh thyme, and serve with your favorite sides.
