Description
A classic French strawberry tart featuring a buttery tart shell, rich vanilla pastry cream, fresh strawberries, and a glossy fruit glaze.

- 1/2 vanilla bean
- 6 tablespoons sugar, divided
- 1 1/3 cups milk
- 4 egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon butter
- 1 baked 9-inch tart crust
- 1 pint fresh strawberries
- 2 tablespoons strawberry or apricot jam
- 1 tablespoon water
Instructions
- Split vanilla bean and scrape seeds.
- Combine vanilla seeds with part of the sugar.
- Heat vanilla sugar, vanilla pod, and 1 cup milk in a saucepan.
- Whisk egg yolks with remaining sugar until pale and thick.
- Mix cornstarch with remaining milk until smooth.
- Slowly combine hot milk with egg mixture.
- Return mixture to saucepan and cook until thickened.
- Whisk in butter and remove vanilla pod.
- Cover pastry cream and chill until cold.
- Spread pastry cream into baked tart shell.
- Slice strawberries and arrange over pastry cream.
- Warm jam with water and brush over strawberries.
- Chill until ready to serve.
Notes
- Serve the tart the same day it is assembled.
- Pastry cream can be made up to 3 days ahead.
- Use ripe but firm strawberries.
- For cleaner servings, make mini tartlets.
