Description

This Fresh Cherry Loaf Cake combines juicy cherries, creamy yogurt, and a soft buttery crumb for an easy summer dessert.


Ingredients

Scale
  • 160 g unsalted butter
  • 160 g granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 150 g Greek yogurt or sour cream
  • 260 g all-purpose flour
  • 2 teaspoons baking powder
  • 300 g fresh cherries, pitted and chopped
  • 2 tablespoons brown sugar
  • 1 teaspoon icing sugar
  • 12 tablespoons dry breadcrumbs optional

Instructions

  1. Preheat oven to 350°F and prepare the loaf pan.
  2. Pit and chop the cherries.
  3. Beat butter and sugar until fluffy.
  4. Add vanilla, eggs, and yogurt and mix well.
  5. Whisk flour and baking powder separately.
  6. Mix dry ingredients into wet ingredients.
  7. Fold two-thirds of the cherries into the batter.
  8. Transfer batter to loaf pan.
  9. Top with remaining cherries and brown sugar.
  10. Bake for 50 to 60 minutes until done.
  11. Cool in the pan before transferring to a wire rack.
  12. Dust with icing sugar before serving.

Notes

  1. Use a kitchen scale for accurate measurements.
  2. Pat cherries dry if very juicy.
  3. Do not overmix the batter.
  4. Store leftovers in an airtight container.
