This Fresh Cherry Loaf Cake combines juicy cherries, creamy yogurt, and a soft buttery crumb for an easy summer dessert.
Ingredients

- 160 g unsalted butter
- 160 g granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 150 g Greek yogurt or sour cream
- 260 g all-purpose flour
- 2 teaspoons baking powder
- 300 g fresh cherries, pitted and chopped
- 2 tablespoons brown sugar
- 1 teaspoon icing sugar
- 1–2 tablespoons dry breadcrumbs optional
Instructions
- Preheat oven to 350°F and prepare the loaf pan.
- Pit and chop the cherries.
- Beat butter and sugar until fluffy.
- Add vanilla, eggs, and yogurt and mix well.
- Whisk flour and baking powder separately.
- Mix dry ingredients into wet ingredients.
- Fold two-thirds of the cherries into the batter.
- Transfer batter to loaf pan.
- Top with remaining cherries and brown sugar.
- Bake for 50 to 60 minutes until done.
- Cool in the pan before transferring to a wire rack.
- Dust with icing sugar before serving.
Notes
- Use a kitchen scale for accurate measurements.
- Pat cherries dry if very juicy.
- Do not overmix the batter.
- Store leftovers in an airtight container.
