Description
Fresh Cherry Sorbet is a refreshing frozen dessert packed with fresh cherries, lime juice, and vibrant summer flavor.
Ingredients

- 4 cups cherries, pitted
- 1 cup sugar
- 1 cup water
- 3 tsp freshly squeezed lime juice
- 1/2 tsp kosher salt
Instructions
- Freeze the base of the ice cream maker for at least 24 hours.
- Combine sugar and water in a saucepan over medium-high heat and simmer until dissolved.
- Cool the simple syrup completely.
- Pit the cherries until you have 4 to 5 cups.
- Blend cherries, 1/2 cup simple syrup, lime juice, and salt until smooth.
- Strain the mixture through a fine mesh sieve.
- Perform the egg float test and adjust sweetness if needed.
- Chill the mixture for 1 hour.
- Pour into the ice cream maker and churn for 15 minutes.
- Transfer to a freezer-safe container and freeze until firm.
- Let soften slightly before serving.
Notes
- Store in the freezer for up to one month.
- Use strawberries, peaches, raspberries, or plums instead of cherries if desired.
- Add 1 to 3 tablespoons of liquor for a boozy version.
- Use a food processor if you do not have a blender.
