Description

Fresh Cherry Sorbet is a refreshing frozen dessert packed with fresh cherries, lime juice, and vibrant summer flavor.


Ingredients

Scale
  • 4 cups cherries, pitted
  • 1 cup sugar
  • 1 cup water
  • 3 tsp freshly squeezed lime juice
  • 1/2 tsp kosher salt

Instructions

  1. Freeze the base of the ice cream maker for at least 24 hours.
  2. Combine sugar and water in a saucepan over medium-high heat and simmer until dissolved.
  3. Cool the simple syrup completely.
  4. Pit the cherries until you have 4 to 5 cups.
  5. Blend cherries, 1/2 cup simple syrup, lime juice, and salt until smooth.
  6. Strain the mixture through a fine mesh sieve.
  7. Perform the egg float test and adjust sweetness if needed.
  8. Chill the mixture for 1 hour.
  9. Pour into the ice cream maker and churn for 15 minutes.
  10. Transfer to a freezer-safe container and freeze until firm.
  11. Let soften slightly before serving.

Notes

  1. Store in the freezer for up to one month.
  2. Use strawberries, peaches, raspberries, or plums instead of cherries if desired.
  3. Add 1 to 3 tablespoons of liquor for a boozy version.
  4. Use a food processor if you do not have a blender.
