Description

Cucumber green goddess wraps are fresh, creamy, and bursting with vibrant herb flavor. With crunchy cucumbers, romaine, and a luscious Greek yogurt-based dressing, these wraps make a light yet satisfying lunch. Quick to prepare, easy to transport, and endlessly customizable.

Wraps:

  • 4 flour tortillas

  • 2 seedless cucumbers (or regular, deseeded)

  • Romaine lettuce, as needed

  • ¼ cup grated Parmesan cheese

  • 2 oz (56 g) cream cheese, softened

  • Toothpicks

Green Goddess Dressing:

  • ½ cup fresh basil

  • 1 clove garlic, grated

  • ½ cup fresh parsley

  • 2 tbsp lemon juice

  • ½ tsp salt

  • ¼ cup milk

  • 1 cup plain Greek yogurt

  • ½ cup diced scallions (white and light green parts)


Instructions

  1. Peel and halve cucumbers lengthwise, then cut into 4–5 long sticks (2 per wrap).

  2. Blend all dressing ingredients until smooth; set aside.

  3. In a bowl, combine softened cream cheese with ⅓ cup + 1 tbsp of the green goddess dressing.

  4. Lay a tortilla flat. Spread the cream cheese mixture down the center. Add Parmesan, romaine, and two cucumber sticks.

  5. Roll tightly, secure with toothpicks, and slice in half.

  6. Repeat for the remaining wraps. Store leftover dressing in the fridge.

Notes

Use room-temperature cream cheese for easier spreading.

Avoid overfilling the wraps to keep them tight and neat.

Add protein like chicken or tofu for a heartier option.

Make the components ahead and assemble fresh for the best texture.

Leftover dressing works great as a dip or salad topping.
