Description

Crockpot Cilantro Lime Chicken is a vibrant, low-effort slow cooker meal packed with fresh herbs, zesty lime, and tender chicken. Perfect for tacos, rice bowls, or salads, this healthy and fuss-free recipe brings bold Tex-Mex flavor to your dinner table with minimal prep.

For the Chicken:

  • 3 lbs (1.4 kg) boneless, skinless chicken breasts or thighs

  • ⅔ cup (160 ml) cilantro lime sauce, divided

For the Cilantro Lime Sauce:

  • ¼ cup (60 ml) avocado oil or neutral oil

  • 3 garlic cloves

  • 1 tsp kosher salt

  • 1 tsp ground cumin

  • ⅓ cup (80 ml) fresh lime juice

  • 1 tbsp (15 ml) honey

  • 2 cups packed fresh cilantro

Optional for Serving:

  • Warm tortillas

  • Sour cream

  • Chopped onion

  • Sliced jalapeños

  • Guacamole


Instructions

  • Blend avocado oil, garlic, salt, cumin, lime juice, honey, and cilantro until smooth.

  • Place chicken in a slow cooker and coat with half the sauce.

  • Cover and cook on low for 5–6 hours or high for 3–4 hours.

  • Remove chicken, shred or chop, and return to the slow cooker.

  • Stir in remaining sauce and juices.

  • Adjust seasoning with more lime or salt.

  • Serve with your favorite toppings in tortillas, over rice, or in bowls.

Notes

For thicker sauce, simmer before adding back to the chicken.

Chop cilantro finely and whisk if no blender is available.

Great for meal prep—use leftovers in tacos, wraps, bowls, or salads.

Freeze for up to 3 months; thaw and reheat with a splash of lime juice.
