  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter, for greasing

Instructions

  1. Heat the oven to 375°F and butter a 2-quart baking dish.
  2. Add sliced peaches, 1/2 cup sugar, lemon juice, cornstarch, 1/2 teaspoon cinnamon, and 1/8 teaspoon salt to a bowl. Stir gently.
  3. Let the peach filling sit for 5 minutes while you make the topping.
  4. Whisk flour, 1/4 cup sugar, baking powder, and 1/4 teaspoon salt in a separate bowl.
  5. Cut in the cold butter until the mixture looks like coarse crumbs.
  6. Stir in milk and vanilla just until a soft dough forms.
  7. Spoon the peach filling into the prepared baking dish.
  8. Drop spoonfuls of dough over the peaches, leaving small gaps for steam.
  9. Mix 1 tablespoon sugar with 1/4 teaspoon cinnamon and sprinkle it over the topping.
  10. Place the dish on a rimmed baking sheet and bake for 38 to 42 minutes, until the filling bubbles and the topping turns golden.
  11. Let the cobbler rest for 10 minutes before serving.

Notes

  1. Use ripe peaches that smell sweet and give slightly when pressed.
  2. For canned peaches, drain well before using.
