Instructions
- Wash, peel, and dice the peaches into small pieces.
- Whisk together flour, salt, sugar, cinnamon, and baking powder in a large bowl.
- Whisk in eggs, milk, and melted butter until smooth.
- Fold diced peaches gently into the batter.
- Heat oil to 375 degrees Fahrenheit in a deep fryer or heavy pan.
- Ladle 1/4 to 1/2 cup batter carefully into hot oil.
- Fry each fritter for 2 to 3 minutes until puffed and golden brown.
- Remove fritters with tongs and drain on paper towels.
- Coat warm fritters in granulated sugar or drizzle with powdered sugar glaze.
- Serve immediately while warm.
