Ingredients
1 ½ cups (180 g) all-purpose flour (or gluten-free flour blend)
1 tsp baking powder
½ tsp salt
1 cup (226 g) unsalted butter, softened
1 ¼ cups (250 g) granulated sugar
4 large eggs
1 tsp vanilla extract (or citrus zest for variation)
½ cup (120 ml) milk or almond milk (for dairy-free version)
Optional Add-ins:
Chopped nuts or dried fruit
Citrus zest or flavored extracts
Almond flour or flax eggs for dietary adaptations
Instructions
Preheat oven to 350°F (175°C). Grease and line a loaf or round cake pan.
Cream butter and sugar until light and fluffy (about 3–4 minutes).
Add eggs one at a time, mixing well after each. Stir in vanilla or other flavorings.
In a separate bowl, whisk together flour, baking powder, and salt.
Alternate adding dry ingredients and milk into the butter mixture. Mix until just combined.
Pour the batter into the prepared pan.
Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure all ingredients are at room temperature before mixing.
Do not overmix the batter—this can make the cake dense.
For a festive touch, serve with whipped cream, fresh berries, or a light glaze.
Vegan and gluten-free versions work well with simple substitutions.
