  • 1/2 cup grated Parmesan cheese
  • 1/2 cup flour
  • 2 eggs, beaten
  • Oil for frying (vegetable or canola)

Instructions

  • Cook tortellini according to package instructions. Drain and allow to cool slightly.
  • Set up a breading station: place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan in a third.
  • Coat each tortellini first in flour, then dip in eggs, and finally coat thoroughly with breadcrumbs.
  • Heat oil in a deep pan to 350°F (175°C). Test by dropping a breadcrumb in; it should sizzle.
  • Fry tortellini in batches, ensuring they don’t overcrowd the pan. Fry until golden brown, about 2-3 minutes.
  • Remove with a slotted spoon and drain on paper towels. Serve warm with dipping sauces like marinara or pesto.
