Description

Fresh Fruit Spring Rolls made with rice paper and colorful fruit. This no-cook recipe works perfectly for kids parties and warm weather snacks.


Ingredients

Scale
  • 15 rice paper wrappers
  • 5 cups mixed fruit cut into matchsticks
  • 5 strawberries thinly sliced
  • 1/3 cup hot water

Instructions

  1. Slice strawberries or visible fruit thinly
  2. Cut remaining fruit into six-inch matchsticks
  3. Pour hot water into a large plate
  4. Soak one rice paper wrapper for ten seconds
  5. Place wrapper flat on a plate or board
  6. Add strawberry slices to the center
  7. Top with matchstick fruit
  8. Fold one corner over filling and tuck sides
  9. Roll gently until sealed
  10. Repeat and serve

Notes

  1. Use a plate large enough for the rice paper wrapper
  2. Do not over-soak the wrappers
  3. Keep fruit pieces dry for easier rolling
