For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

For the filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

For the fruity swirls:

  • 1 cup fresh or frozen berries (strawberries, raspberries, or blueberries)
  • 2 tbsp sugar

Instructions

  • Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
  • Make the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
  • Prepare the fruit puree: Blend the berries with sugar until smooth. Strain if needed.
  • Assemble the cheesecake: Pour the filling over the crust. Drop spoonfuls of fruit puree and use a knife to create swirls.
  • Bake: Reduce oven to 325°F (165°C) and bake for 50-60 minutes until set. Let cool, then refrigerate for at least 4 hours.
  • Serve: Garnish with fresh fruit or a drizzle of extra puree.
