Instructions
- Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
- Make the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
- Prepare the fruit puree: Blend the berries with sugar until smooth. Strain if needed.
- Assemble the cheesecake: Pour the filling over the crust. Drop spoonfuls of fruit puree and use a knife to create swirls.
- Bake: Reduce oven to 325°F (165°C) and bake for 50-60 minutes until set. Let cool, then refrigerate for at least 4 hours.
- Serve: Garnish with fresh fruit or a drizzle of extra puree.
