Ingredients
-
450 g (1 lb) boneless skinless chicken breasts, cut into bite-sized pieces
-
4 cloves garlic, minced
-
60 g (4 Tbsp) unsalted butter, divided
-
225 g (8 oz) fettuccine or linguine
-
100 g (1 cup) freshly grated Parmesan cheese
-
120 ml (½ cup) heavy cream
-
Salt and black pepper, to taste
-
Fresh parsley, chopped (optional)
Instructions
-
Prep: Mince garlic and cut chicken into bite-sized cubes.
-
Cook chicken: Melt 2 Tbsp butter in a skillet over medium-high. Add chicken and cook 5–7 minutes until golden and cooked through.
-
Add flavor: Stir in garlic, salt, and pepper. Cook 1 minute until fragrant.
-
Make sauce: Lower heat. Add heavy cream, remaining butter, and Parmesan. Stir until silky.
-
Cook pasta: Boil in salted water until al dente (8–10 minutes). Reserve ½ cup pasta water before draining.
-
Combine: Toss pasta into the skillet with the sauce and chicken. Add pasta water as needed for creaminess.
-
Serve: Garnish with parsley and enjoy immediately.
Notes
Don’t overcrowd the skillet—chicken sears best with space.
Reserved pasta water helps adjust sauce thickness.
Use freshly grated Parmesan for the smoothest sauce.
Pasta options: spaghetti, penne, or rigatoni also work well.
Best served fresh, but leftovers reheat with a splash of milk or cream.
