  • 500g chicken breasts or thighs, cut into bite-sized pieces
  • 3 tbsp butter (salted or unsalted)
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 tsp red pepper flakes (optional, for heat)

Instructions

  • Prepare the Chicken: Pat the chicken dry with a paper towel to ensure a good sear. Toss with paprika, salt, and pepper until evenly coated.
  • Heat the Pan: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer. Avoid overcrowding for the best results.
  • Cook the Chicken: Sear the chicken for 3–4 minutes on one side without moving, then flip and cook another 3–4 minutes. Remove the chicken from the pan and set aside.
  • Make the Garlic Butter: Lower the heat to medium. Add the butter and minced garlic to the same pan. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.
  • Combine and Finish: Return the chicken to the skillet, tossing it in the garlic butter until well-coated. Cook for 1–2 minutes to warm through. Sprinkle with parsley or red pepper flakes for added flavor.
  • Serve: Serve hot with your choice of sides, such as rice, pasta, or a fresh salad. Enjoy!

Notes

  • Don’t Overcrowd the Pan: To achieve a golden crust, cook the chicken in a single layer without overcrowding. This ensures even searing and prevents steaming.
  • Timing is Key for Garlic: Add the garlic after the chicken is cooked and reduce the heat to avoid burning it. Burnt garlic can turn bitter and ruin the flavor of the dish.
