Description

This easy family dinner is pure comfort food magic—juicy chicken, buttery potatoes, and tender carrots all slow-cooked to perfection.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 1.5 lbs baby red potatoes, quartered

  • 1 lb whole carrots, peeled and cut into chunks

  • 6 cloves garlic, minced

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp chopped parsley (optional, for garnish)

  • 1/2 cup chicken broth


Instructions

  • Place chicken, potatoes, and carrots into the slow cooker.

  • In a bowl, combine melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.

  • Pour the garlic butter mixture over the ingredients in the slow cooker.

  • Stir gently to coat everything evenly.

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

  • Garnish with fresh parsley if desired and serve warm.
