Description

Slow Cooker Garlic Butter Chicken and Veggies is a comforting one-pot meal with tender chicken, potatoes, and carrots coated in a rich garlic butter sauce, perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes, cut into wedges
  • 1/2 cup salted butter, melted
  • 1 Tbsp minced garlic
  • Salt to taste
  • Black pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Place the chicken in the center of the slow cooker and arrange the potato wedges and baby carrots around it.
  2. In a bowl, mix the melted butter, minced garlic, salt, pepper, thyme, and parsley until combined.
  3. Pour the garlic butter mixture evenly over the chicken and vegetables.
  4. Cover and cook on high for 4 hours or on low for 6 to 8 hours.
  5. Serve hot, spooning the garlic butter sauce over each portion.
