  • 2 large boneless, skinless chicken breasts
  • 1 cup long-grain white rice (e.g., jasmine or basmati)
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 ½ cups chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • Optional: Red pepper flakes, parsley for garnish

Instructions

  • Prepare the Chicken
    Season the chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 6-7 minutes per side, or until golden brown and fully cooked. Remove from the skillet and set aside.
  • Make the Garlic Butter Sauce
    In the same skillet, lower the heat and melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn it. Pour in ½ cup of chicken broth and let it simmer for 3-4 minutes, reducing slightly. Add a pinch of red pepper flakes if desired.
  • Cook the Rice
    Stir the uncooked rice into the skillet with the garlic butter sauce, coating the grains evenly. Add the remaining 1 cup of chicken broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender and all the liquid is absorbed.
  • Combine and Serve
    Stir the grated Parmesan cheese into the rice for a creamy, cheesy finish. Return the cooked chicken to the skillet, placing it on top of the rice. Cover and let sit for 5 minutes to allow the chicken to absorb the flavors. Garnish with fresh parsley and serve warm.

  • Don’t Overcook the Chicken: Ensure the chicken is cooked until just done (internal temperature of 165°F or 74°C) to keep it tender and juicy. Overcooking can make it dry.
