For the Garlic Butter Steak Bites:

  • 1 lb beef sirloin (cut into bite-sized cubes)
  • 4 tbsp butter
  • 4 cloves garlic (minced)
  • 1 tbsp fresh thyme (or rosemary)
  • Salt and pepper (to taste)

For the Cheesy Smashed Potatoes:

  • 2 lbs Yukon Gold potatoes
  • 1 cup shredded cheddar cheese
  • 4 tbsp butter
  • 1/2 cup cream or milk
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper (to taste)

Instructions

  • Prepare the Steak Bites:
    • Season beef cubes with salt and pepper.
    • Heat butter in a skillet over medium-high heat.
    • Add steak cubes and sear for 3-5 minutes, turning to brown evenly.
    • Stir in minced garlic and fresh thyme, cooking for 1 minute.
    • Remove from heat and set aside.
  • Prepare the Potatoes:
    • Boil potatoes in salted water until fork-tender (10-12 minutes).
    • Drain and place on a baking sheet. Lightly smash each potato.
    • Top with butter, cream, cheese, salt, and pepper.
    • Bake at 400°F (200°C) for 15-20 minutes until cheese is melted and edges are crispy.
  • Serve:
    • Plate steak bites alongside cheesy smashed potatoes.
    • Drizzle extra garlic butter sauce over the steak and garnish with fresh herbs.

Notes

1️⃣ Don’t Overcrowd the Pan: When cooking steak bites, avoid overcrowding the skillet. Cook in batches if needed to ensure each piece gets a nice sear and doesn’t steam.

2️⃣ Watch the Garlic Closely: Add garlic towards the end of cooking the steak to prevent it from burning. Burnt garlic can taste bitter and ruin the dish’s flavor.

3️⃣ Crispy Potato Edges: For extra crispy smashed potatoes, lightly smash them and bake at a high temperature (400°F/200°C). Broil them for 1-2 minutes at the end for maximum crispiness.
