For the Garlic Butter Steak Bites:
- 1 lb beef sirloin (cut into bite-sized cubes)
- 4 tbsp butter
- 4 cloves garlic (minced)
- 1 tbsp fresh thyme (or rosemary)
- Salt and pepper (to taste)
For the Cheesy Smashed Potatoes:
- 2 lbs Yukon Gold potatoes
- 1 cup shredded cheddar cheese
- 4 tbsp butter
- 1/2 cup cream or milk
- 1/2 tsp garlic powder (optional)
- Salt and pepper (to taste)
Instructions
- Prepare the Steak Bites:
- Season beef cubes with salt and pepper.
- Heat butter in a skillet over medium-high heat.
- Add steak cubes and sear for 3-5 minutes, turning to brown evenly.
- Stir in minced garlic and fresh thyme, cooking for 1 minute.
- Remove from heat and set aside.
- Prepare the Potatoes:
- Boil potatoes in salted water until fork-tender (10-12 minutes).
- Drain and place on a baking sheet. Lightly smash each potato.
- Top with butter, cream, cheese, salt, and pepper.
- Bake at 400°F (200°C) for 15-20 minutes until cheese is melted and edges are crispy.
- Serve:
- Plate steak bites alongside cheesy smashed potatoes.
- Drizzle extra garlic butter sauce over the steak and garnish with fresh herbs.
