Description

This garlic butter steak bites and potatoes recipe is easy, rich, and ready in under 20 minutes.


Ingredients

Scale

¼ cup ghee or butter, divided

1 tablespoon olive oil

1 lb yukon gold potatoes, cut into ½ inch cubes

3 garlic cloves, minced

1 teaspoon dried thyme

½ teaspoon dried oregano

½ teaspoon sea salt, plus more to taste

¼ teaspoon ground black pepper, plus more to taste

1 ¼ lb sirloin steak, cut into ½ inch cubes


Instructions

1. Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons ghee.

2. Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook 2–3 minutes, stir, then cook 8–10 minutes until golden and tender. Remove from pan.

3. Increase heat to medium-high. Add remaining ghee, then steak. Season with salt and pepper. Cook 2 minutes before stirring. Continue cooking 1–2 minutes until browned.

4. Return potatoes to skillet and stir. Adjust seasoning and top with parsley. Serve warm.

Notes

Use red, yellow, or fingerling potatoes if preferred.

Cut potatoes small and even for faster results.

Let steak sear before stirring.
