Description

Garlic Butter Zucchini Skewers are a quick and flavorful grilled side dish made with fresh zucchini, garlic butter, and simple seasonings.


Ingredients

  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Wash and slice zucchini into thick rounds or half-moons
  2. Melt butter over low heat and add minced garlic until fragrant
  3. Combine zucchini with olive oil, salt, pepper, and garlic butter
  4. Thread zucchini onto skewers
  5. Preheat grill to 400°F
  6. Grill skewers for 8-10 minutes turning occasionally
  7. Drizzle lemon juice before serving
