- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil divided
- 4 cloves garlic minced
- 1 teaspoon dried thyme
- 1 teaspoon dried Italian herbs
- 1 teaspoon salt

- 4 large russet potatoes peeled and cut into chunks
- 4 tablespoons butter
- 1/2 cup whole milk warmed
- 2 ounces cream cheese
- 1 pound carrots peeled and halved if large
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 tablespoon honey
- 1 clove garlic grated
- 1 shallot minced
- 2 cloves garlic minced
- 1/2 cup dry white wine
- 1/2 cup chicken stock
- 2 tablespoons cold butter
Instructions
- Add peeled and chunked potatoes to a pot of cold salted water and bring to a boil. Cook until fork tender about 15 minutes then drain and return to the hot pot briefly to remove excess moisture.
- Preheat oven to 425°F. Toss carrots with olive oil salt and pepper on a parchment lined baking sheet and roast for 25 to 35 minutes until tender and caramelized.
- Melt butter honey and grated garlic in a small pan until bubbly then toss roasted carrots in the honey butter glaze.
- Season chicken with salt pepper minced garlic thyme and Italian herbs with olive oil. Sear in a skillet for 5 to 6 minutes per side until golden and cooked through then transfer to a plate.
- In the same skillet sauté shallot and garlic for 1 to 2 minutes then deglaze with white wine scraping up browned bits. Simmer briefly then add chicken stock and reduce slightly. Whisk in cold butter off heat to form a silky sauce.
- Mash the hot potatoes then warm butter cream cheese and milk together and stir into the potatoes until smooth and creamy. Season to taste.

- Glazed carrots can be prepared ahead of time and reheated gently before serving.
