Ingredients
4 boneless, skinless chicken breasts
680 g (1.5 lbs) baby potatoes, halved
240 ml (1 cup) chicken broth
50 g (½ cup) grated parmesan cheese
4 garlic cloves, minced
1 tbsp Italian seasoning
1 tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
30 ml (2 tbsp) olive oil
Fresh parsley, for garnish (optional)
Instructions
Prep the Ingredients: Wash and halve the potatoes. Mince the garlic and set aside.
Season the Chicken: Rub chicken with olive oil, Italian seasoning, salt, pepper, and red pepper flakes if desired.
Layer in the Crockpot: Add potatoes to the bottom, then place seasoned chicken on top.
Add Broth and Cheese: Pour in chicken broth, sprinkle garlic over the chicken, and top with grated parmesan.
Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and potatoes are soft.
