Description

  • 4 chicken thighs or breasts
  • 4 Yukon gold or red potatoes, cut into bite-sized pieces
  • 4 cloves fresh garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  • Preheat oven to 400°F (200°C).
  • Rinse and pat dry the chicken pieces.
  • Season chicken with salt and pepper on both sides.
  • In a small bowl, mix minced garlic and grated Parmesan cheese.
  • Rub the garlic-Parmesan mixture evenly over the chicken pieces.
  • Toss the potatoes with olive oil, salt, and pepper in a bowl until well-coated.
  • Arrange the chicken and potatoes on a baking sheet or roasting pan.
  • Roast in the preheated oven for 45 minutes, turning potatoes halfway through.
  • Check if chicken is cooked through (internal temperature should reach 165°F or 74°C) and if potatoes are golden brown and crispy.
  • Transfer to a serving platter and garnish with freshly chopped parsley if desired.

Notes

For crispier potatoes, avoid overcrowding the pan.

Substitute Parmesan with Romano or Asiago if desired.

Use sweet potatoes or add veggies like zucchini or bell peppers for variety.

Store leftovers in an airtight container for up to 3 days and reheat in the oven to maintain texture.
