Ingredients
1 lb (450 g) lean ground chicken
3 garlic cloves, minced
1/2 cup (50 g) grated parmesan cheese
1/2 cup (60 g) plain breadcrumbs
2 large eggs
1 small onion, finely chopped (about 100 g)
1/4 cup (60 ml) ketchup (for topping)
Salt and pepper, to taste
Instructions
Preheat oven to 375°F (190°C). Grease a baking dish or line with parchment paper.
In a large bowl, combine ground chicken, garlic, parmesan, breadcrumbs, eggs, and onion. Season with salt and pepper. Mix gently.
Shape the mixture into a loaf and place in the prepared baking dish.
Spread ketchup evenly over the top of the loaf.
Bake for 45–50 minutes or until the internal temperature reaches 165°F (75°C).
Let rest for 5 minutes before slicing. Serve warm.
Notes
Avoid overmixing the meat to keep the loaf tender.
For extra moisture, add 1 tbsp of milk or broth.
Sprinkle extra parmesan on top during the last 10 minutes for a golden crust.
Substitute ketchup with marinara or BBQ sauce for variation.
