Ingredients
4 boneless, skinless chicken breasts (≈680 g)
1.5 lbs (≈680 g) baby potatoes, halved
1 cup (240 ml) chicken broth
½ cup (50 g) grated parmesan cheese
4 cloves garlic, minced
1 tbsp (15 g) Italian seasoning
1 tsp (5 g) salt
½ tsp (2 g) black pepper
½ tsp (2 g) red pepper flakes (optional)
2 tbsp (30 ml) olive oil
Fresh parsley, for garnish (optional)
Instructions
Wash and halve potatoes. Mince garlic.
Rub chicken with olive oil, Italian seasoning, salt, pepper, and red pepper flakes.
Layer potatoes in the bottom of the crockpot, then place chicken on top.
Pour broth over chicken and potatoes. Sprinkle with garlic and parmesan.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken reaches 165 °F (74 °C) and potatoes are tender.
Remove chicken and potatoes carefully. Spoon sauce over top.
Garnish with parsley and serve warm.
Notes
Use freshly grated parmesan for richer flavor and smoother sauce.
For extra creaminess, stir in heavy cream or cream cheese near the end of cooking.
Crisp the chicken under the broiler for 2 minutes after slow cooking if you want a golden top.
