Description

Tender chicken breasts slow-cooked with baby potatoes, garlic, parmesan cheese, and herbs for an easy family dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • pounds baby potatoes, halved
  • 1 cup chicken broth
  • ½ cup grated parmesan cheese
  • 4 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Wash and halve the baby potatoes.
  2. Mince the garlic.
  3. Rub chicken with olive oil and seasonings.
  4. Layer potatoes in the crockpot.
  5. Place chicken on top.
  6. Pour chicken broth over everything.
  7. Sprinkle garlic and parmesan over the chicken.
  8. Cook on low for 6 to 7 hours or high for 3 to 4 hours.
  9. Check chicken reaches 165°F and potatoes are tender.
  10. Serve with sauce and garnish with parsley.

Notes

  1. Use freshly grated parmesan for best texture.
  2. Do not overcook the chicken.
  3. Store leftovers in the refrigerator for up to 4 days.
