- 4 boneless, skinless chicken breasts
- 1½ pounds baby potatoes, halved
- 1 cup chicken broth
- ½ cup grated parmesan cheese
- 4 garlic cloves, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Wash and halve the baby potatoes.
- Mince the garlic.
- Rub chicken with olive oil and seasonings.
- Layer potatoes in the crockpot.
- Place chicken on top.
- Pour chicken broth over everything.
- Sprinkle garlic and parmesan over the chicken.
- Cook on low for 6 to 7 hours or high for 3 to 4 hours.
- Check chicken reaches 165°F and potatoes are tender.
- Serve with sauce and garnish with parsley.
Notes
- Use freshly grated parmesan for best texture.
- Do not overcook the chicken.
- Store leftovers in the refrigerator for up to 4 days.
