Description

Tender zucchini, yellow squash, and cherry tomatoes roasted with fresh garlic, Italian seasoning, olive oil, and Parmesan cheese until golden and flavorful.

Ingredients

Scale
  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1 pint cherry or grape tomatoes, halved
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 cup finely grated Parmesan cheese
  • 2 tablespoons chopped fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper.
  2. Wash and thoroughly dry the zucchini, yellow squash, and tomatoes.
  3. Slice the zucchini and yellow squash into even 1/4-inch rounds, halve the tomatoes, and mince the garlic.
  4. Place the zucchini, squash, and tomatoes in a large mixing bowl.
  5. Add the olive oil, minced garlic, salt, black pepper, and Italian seasoning.
  6. Toss gently until the vegetables receive an even coating of oil and seasonings.
  7. Spread the vegetables in a single layer across the prepared baking sheet, leaving space between the pieces.
  8. Sprinkle the grated Parmesan evenly over the vegetables.
  9. Roast for 20 to 25 minutes, rotating the pan after about 12 minutes.
  10. Broil for 1 to 2 minutes when deeper browning is desired, watching closely.
  11. Remove the pan from the oven and let the vegetables rest for 3 minutes.
  12. Garnish with fresh basil or parsley and serve warm.

Notes

  1. Dry the vegetables thoroughly before roasting to support browning.
  2. Use a large metal baking sheet and avoid overcrowding the vegetables.
  3. Cut the zucchini and squash into even slices so they cook at the same rate.
  4. Add salt immediately before roasting rather than far in advance.
  5. For a crisper topping, mix the Parmesan with 2 tablespoons of panko breadcrumbs.
  6. Store cooled leftovers in an airtight container in the refrigerator for up to 4 days.
  7. Reheat leftovers on a sheet pan at 375°F for 8 to 10 minutes.
