Description

Juicy roasted cherry tomatoes with garlic, olive oil, and cracked black pepper make an easy and flavorful appetizer or side dish ready in just 25 minutes.


Ingredients

  • 2 (10-ounce) containers cherry tomatoes, halved
  • 6 large garlic cloves, minced
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon kosher salt
  • 2 teaspoons freshly cracked black pepper

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Add cherry tomatoes, garlic, olive oil, salt, and black pepper to a medium bowl and toss well.
  3. Spread the tomatoes evenly onto the prepared baking sheet.
  4. Bake for 20 to 25 minutes until tomatoes are soft and fragrant.
  5. Remove from the oven and serve warm over pasta, pizza, grilled chicken, or toasted bread.

Notes

  1. Store leftovers in an airtight container in the refrigerator for up to 5 days.
