Ingredients
Scale
For the Brownie Base:
- 1 cup unsalted butter
- 4 oz German’s sweet chocolate (or semi-sweet chocolate)
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
For the Coconut-Pecan Topping:
- 1 cup evaporated milk
- 1 cup packed brown sugar
- 3 large egg yolks
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat Oven & Prepare Pan
Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it well. - Make the Brownie Base
- In a saucepan, melt butter and chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
- In a large bowl, whisk sugar, eggs, and vanilla. Gradually mix in the melted chocolate mixture.
- Sift in flour and salt, gently folding until just combined. Pour batter into the prepared pan.
- Bake Brownies
Bake for 30-35 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely. - Prepare the Topping
- In a saucepan, combine evaporated milk, brown sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
- Remove from heat and stir in vanilla, coconut, and pecans. Let the mixture cool slightly.
- Assemble & Finalize
- Spread the coconut-pecan topping evenly over the cooled brownies.
- Bake for an additional 10-12 minutes to set the topping. Cool completely before slicing into squares.
Notes
- Don’t Overbake the Brownies: Keep an eye on the baking time to ensure the brownies stay fudgy. A toothpick should come out with moist crumbs, not wet batter. Overbaking can make them dry.
- Cook the Topping Until Thickened: When preparing the coconut-pecan topping, stir constantly and cook until it reaches a thick, creamy consistency. This ensures the topping sets properly and doesn’t become runny.
- Let Everything Cool Before Assembling: Allow the brownies to cool completely before spreading the topping. This prevents the topping from melting into the brownies and keeps the layers distinct.
