For the Cake:

  • 4 large eggs

  • 1 cup all-purpose flour

  • 4 ounces dark chocolate

Instructions

  • Make the Cake: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Mix the dry ingredients in a bowl: flour, cocoa powder, baking powder, and salt. In a separate bowl, beat the eggs and sugar until light and fluffy. Add vanilla extract and water, then combine the wet and dry ingredients.

  • Bake the Cake: Spread the batter evenly on the prepared baking sheet. Bake for 12-15 minutes, or until a toothpick inserted comes out clean. Let the cake cool for a few minutes, then flip it onto a clean kitchen towel dusted with powdered sugar.

  • Prepare the Coconut-Pecan Filling: In a saucepan, combine evaporated milk, brown sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, until thickened (about 5-7 minutes). Stir in coconut and pecans, then remove from heat and let it cool.

  • Assemble the Cake Roll: Once the cake has cooled slightly, spread the coconut-pecan filling evenly over the surface. Roll the cake using the towel to help, making sure it’s tight but not too tight. Let it rest, seam side down.

  • Make the Ganache: Heat the heavy cream in a small saucepan until simmering. Pour it over chopped dark chocolate and stir until smooth. Add butter for extra shine and richness. Pour the ganache over the rolled cake.

  • Serve: Slice and serve, enjoying the light and decadent treat!

Notes

You can use milk or dark chocolate in the ganache based on your preference.
