- Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla. Gradually mix in the dry ingredients until combined. Chill dough for at least 2 hours.
- Make the Coconut-Pecan Topping:
- In a saucepan over medium heat, whisk evaporated milk, sugar, egg yolks, butter, and vanilla until thickened (about 10 minutes). Stir in shredded coconut and pecans. Let cool to room temperature.
- Bake the Cookies:
