Coconut-Pecan Topping:

  • ¾ cup evaporated milk
  • ¾ cup granulated sugar
  • 2 large egg yolks
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 ½ cups shredded coconut
  • ¾ cup chopped pecans

Instructions

  • Prepare the Cookie Dough:
    • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
    • Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla. Gradually mix in the dry ingredients until combined. Chill dough for at least 2 hours.
  • Make the Coconut-Pecan Topping:
    • In a saucepan over medium heat, whisk evaporated milk, sugar, egg yolks, butter, and vanilla until thickened (about 10 minutes). Stir in shredded coconut and pecans. Let cool to room temperature.
  • Bake the Cookies:
    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Roll dough into 1-inch balls, place them 2 inches apart, and flatten slightly. Bake for 8-10 minutes, until edges are set.
  • Assemble the Cookies:
    • Once cookies are cool, top each with a generous spoonful of coconut-pecan frosting. For an extra touch, drizzle with melted chocolate.

  • Chilling the Dough is Key: Don’t skip chilling the dough for at least 2 hours. This step ensures the cookies hold their shape and have a chewy texture instead of spreading too thin during baking.
