Description

Creamy, spicy, and quick-to-make Gigi Pasta — a perfect comfort food for every occasion.


Ingredients

Scale

16 ounces rigatoni or penne pasta

1/2 cup extra virgin olive oil

1 tbsp garlic (finely minced)

2/3 cup tomato paste

1 1/3 cup heavy cream

2 tsp red pepper flakes

2 tsp dried basil

Salt & pepper to taste

1/2 cup grated parmesan

2 tbsp butter

1/2 cup pasta water

Optional: parsley & chili flakes


Instructions

1. Boil pasta in salted water until al dente. Reserve 1 cup of pasta water.

2. In a saucepan, heat olive oil and sauté garlic.

3. Add tomato paste and cook for 4–5 minutes.

4. Stir in heavy cream and simmer for 2 minutes.

5. Add seasoning and parmesan cheese.

6. Add butter and pasta water until creamy.

7. Toss in cooked pasta and garnish with parsley and chili flakes.

Notes

You can use any pasta shape. Adjust red pepper flakes for spice. For vegan version, replace cream and butter with plant-based alternatives.
