Description
Soft, spiced gingerbread truffles made with crushed cookies and cream cheese, dipped in white chocolate and finished with festive toppings.
Ingredients
- Gingerbread cookies, crushed – 300 g (about 2½ cups)
- Cream cheese, softened – 120 g (4 oz)
- Ground cinnamon – ½ teaspoon
- Ground nutmeg – ¼ teaspoon
- Ground cloves – ¼ teaspoon
- Vanilla extract – 1 teaspoon
- White chocolate chips or melting wafers – 250 g (8 oz)
- Optional toppings: sprinkles, crushed cookies, or cinnamon
Instructions
- Crush gingerbread cookies into fine crumbs using a food processor or rolling pin.
- Mix cookie crumbs, cream cheese, spices, and vanilla until a soft dough forms.
- Roll mixture into tablespoon-sized balls and place on a parchment-lined tray.
- Chill truffles until firm.
- Melt white chocolate gently, then dip each truffle and return to tray.
- Add toppings before chocolate sets and allow to firm completely.
